Plants used in Mexican Cuisine (from RHS, The Garden, August 2019)

  1. courgette (fruit & flowers)
  2. jalapeno pepper
  3. tomato
  4. coriander
  5. fat hen: a global weed found in old and new worlds since prehistoric times.  The leaves of this annual have a mild but pleasant flavour.  Use leaves and tender stems in tacos or rolled tortillas.
  6. french bean
  7. tomatillo
  8. purslane: an annual with succulent leaves that can be cooked as greens.  Of old world origin.
  9. chard (beta vulgaris): strongly flavoured green that can be stewed or cooked in soups.
