Roasted Figs with Goats Cheese and Honey

When figs come ripe on the tree all of a sudden whoosh!, there’s a glut of ripe gooey delicious figs. What to do? This recipe is simple for summer cooking and super delicious! A classic worth having again and again

Take as many fresh figs as you have (a dozen or so). Cut a cross in the top and sprinkle crumbled fresh soft goats cheese into the centre. Place into a roasting pan and then drizzle on top with extra virgin olive oil and season lightly with sea salt and gresh ground pepper.

Then simply place under a hot grill for 4 minutes or so. When done you can sprinkle with some chopped pistacio nuts if so desired, or simply drizzle lightly with runny honey and serve warm. Also good cooled.
